COMPOSITION:
88% Merlot – Pepper Bridge Vineyard, Walla Walla Valley and
Preston Vineyard, Columbia Valley
6% Cabernet Sauvignon – McClellan Estate, Walla Walla Valley
4% Carmenere – Davis Vineyard, Walla Walla Valley
2% Syrah – Lewis Vineyard, Yakima Valley

TECHNICAL NOTES:
pH 3.64
Total Acidity 0.61 g/100mL
Alcohol 13.6% By Volume

FERMENTATION:
Small open top stainless steel tanks. Inoculated with a
Saccharomyces cerevisiae species after cold soaking. The cap
was punched down two times per day. The wine was
transferred to American oak barrels to complete fermentation.
