The 2006 vintage will not disappoint you.  Our Une Vallée is a classic Left Bank Bordeaux-style blend that begins with powerful scents of baking spices, subtle floral notes and an abundance of berries.  It is a full-bodied wine that offers layers of seductive ripe black cherry and red berry fruit flavors with supple, sweet tannins.  The finish is smooth and lingering, and very satisfying.  Even now the Une Vallée is quite appealing, but to enjoy the best this wine has to offer, I would recommend waiting at least 6-12 months before drinking.

60% Cabernet Sauvignon, Pepper Bridge Vineyard
34% Merlot, Seven Hills Vineyard
6% Cabernet Franc, McClellan Estate Vineyard

TA  0.60 g/100mL
Alcohol  14.1% By Volume

FERMENTATION:
Small open top stainless steel tanks.  Inoculated with a Saccharomyces cerevisiae species after cold soaking. The cap was punched down three times per day.  Free run juice was transferred to French oak barrels to complete fermentation.
