Small open top stainless steel fermenters. The cap was punched down three times per day by hand. Free run juice was transferred to a French oak puncheon to complete fermentation.

Tasting Notes

Don’t be fooled! This King of Italian varietals looks deceivingly light, but is robust and age worthy. Aromatically rich with high toned cherry fruit, oolong tea and tar. The first sip will transport you to a tiny village in the Piedmont region of Italy as your palate sings with the juicy cherry flavors framed with earthy, briny, floral notes. The tannins are ample yet supple, with a finish that goes on and on, begging for another sip.
