Fermented in small open top stainless steel fermenters. The cap was gently punched down by hand three times per day. The wine was left on the skins for seven to ten days and then pressed to barrel to finish fermentation.

The crème de la crème. This Big Sky Cuvée is bottle-aged for 18 months giving the varietals in this Merlot-dominant Bordeaux-style blend time to integrate into a plush and polished wine. The aromas of black cherry, red plum, blueberry, rich baking spice, and cocoa nibs are intriguing. Complex flavors of cherry, red plum jam, dark chocolate, and barrel spice expose the rich textures and elegance of this wine. The amazing finish lingers on the palate, imploring another sip. Drink now or hold for future enjoyment…it will only get better!
