Fermentation
Very slowly fermented in 225 Liter French oak barrels. The lees were stirred weekly to contribute to a rich mouth feel. Secondary fermentation was encouraged until the acidity was perfectly balanced.

9 months in French Burgundian oak barrels, 20% new Chassagne-Montrachet style
Tasting Notes
2019 was another great vintage for our Chardonnay! Cooler September temperatures helped preserve the natural freshness in this fruit and provided near perfect growing conditions. The wine opens with lovely aromas of Asian pear and gala apple. It dances on the palate with mouthwatering minerality, delicious pear, citrus and stone fruit, along with a hint of creme brulee and creamy lemon.
