Small open top stainless steel tanks. The cap was punched down three times per day by hand. Free run juice was transferred to French oak barrels to complete fermentation.
Aging
17 months in French oak barrels. 30% New.
Tasting Notes
The 2020 vintage in the Walla Walla Valley was warmer than the norm with near perfect weather for ripening the fruit used to craft this Cabernet Sauvignon. This wine is a beautiful ruby-color with aromas and rich flavors of blackberry, black cherry, cedar, cocoa, and baking spices. The tannins coat the palate, and the mouthfeel is smooth and supple. Enjoy with a juicy steak and herb roasted morel mushrooms, or a grilled bacon and blue bison burger with truffle fries. Cheers!
