Handpicked and hand sorted into 1.5 and 2 ton open top stainless steel fermenters. The cap was gently punched down by hand three times per day. After gently pressing, the young wine was transferred to French oak barrels and puncheons to complete fermentation.
17 months in neutral 500-liter puncheons and barrels.
This gorgeous ruby red wine offers aromas and flavors of black raspberry and black cherry fruit, along with notes of anise, white pepper, tobacco, and sweet herb. A versatile wine that pairs beautifully with slow cooked meats and stews, mushroom risotto and charcuterie. Or, venture to the sweeter side and try it with brownies, truffles or lava cake. Enjoy!
