Small open top stainless steel tanks. The cap was punched down three times per day by hand. Free run juice was transferred to French oak barrels to complete fermentation.

Aging

17 months in French oak barrels. 20% New.

Tasting Notes

Tempranillo is one of the oldest wine grapes in the world. A popular theory purports it was brought to present day Spain by the Phoenicians over 3,000 years ago. In the Walla Walla Valley, our friend and viticulturalist, Leonard Brown planted the Watermill block in The Rocks District in 2006. This wine has become a favorite for the Saviah faithful. It opens with enticing aromas of cherry, plum, red pepper, olive brine, tobacco, and a touch of barrel spice. The flavors mirror the aromas as they swirl on the palate, smooth and supple with a delicious finish.
