Partially whole cluster, partially destemmed and crushed into open top fermenters with cap punched down by hand two-three times per day. Secondary fermentation finished in barrel and puncheons.

The palate is loaded with complex layers of delicious red and black fruit, minerality, cracked pepper, and tapenade framed by a velvety texture and richness.
