Small open top stainless-steel fermenters. The cap was punched down two times per day by hand. The wine was transferred to 225 Liter oak barrels to complete primary and secondary fermentation.

23 months French oak barrels, 25% new

Tasting Notes

The Jack Reserve is a cuvée of some of our favorite vineyards in the Walla Walla Valley. What makes this wine special is the extra time in the barrels. Resulting in rich, concentrated flavors with silky fine-grained tannins. The wine is complex and seamless with aromas and flavors of blackberry, black cherry, and plum, along with hints of cedar, cocoa nibs, and vanilla. A great wine to pair with grilled ribeye, meatballs, steak and blue cheese salad, mushroom and green pepper pizza, or a classic cheeseburger. Or just savor a glass on a cozy evening while relaxing.
