Fermentation

Small open top stainless steel fermenters. The cap was punched down two times per day by hand.  The wine was transferred to French oak barrels to complete fermentation.

Aging

French oak barrels, 30% new

Tasting Notes

The Jack Cabernet Sauvignon is a winner!  The fruit used to craft this beautiful Cabernet-based blend comes from some of the finest vineyards in Washington State. This full-bodied wine is loaded with aromas of cassis, plum, black cherry, cedar, and barrel spice.  The tannins are supple and smooth, with delicious flavors and a long generous finish. Enjoy!
