Handpicked and hand sorted into 1.5 and 2 ton open top stainless steel fermenters. One-third whole cluster with two-thirds destemmed fruit. The cap was punched down three times per day by hand. After pressing the must, the young wine was transferred to 500-liter puncheons to complete fermentation.
Aging
17 months in neutral French oak puncheons.
Tasting Notes
The Waterstone Estate Syrah is the newest addition to our family of wines from The Rocks District, and it is simply divine. This wine is nicely balanced with equal fruity and savory components and reveals complex flavors of dark fruit, smoked meat, blueberry, orange peel and pepper. Enjoy this Syrah today, or for even more satisfaction give it some time in the cellar. It will easily age for 12-15 years. Enjoy!
