Fermentation
Handpicked and hand sorted fruit crushed into small open top stainless-steel fermenters. The cap was gently punched down by hand three times per day. The wine was left on the skins for eight to fourteen days and then pressed to barrel to finish fermentation.
Aging
18 months in French oak barrels. 40% New.
Tasting Notes
The 2022 Big Sky Cuvee is a selection of the finest barrels of the vintage. A reserve style wine that receives an extra year of bottle aging prior to release. Deep garnet in the glass, the aromatics show black cherry, red plum and cassis, framed by subtle notes of dried rose, cocoa and warm baking spice. On the palate, rich flavors of black cherry, red currant, and plum dance beautifully with cocoa nibs, cedar, and barrel spice. The wine is layered and composed, with silky tannins and superb balance. Best enjoyed from 2026 to 2040. Enjoy!
