Fermentation
Handpicked and hand sorted into 1.5 ton open top stainless steel fermenters, 100% foot stomped whole cluster fruit. The cap was pumped over two times per day. After gently pressing, the young wine was transferred to a French oak puncheon to complete fermentation.
Aging
Aged 21 months in neutral 500-Liter French oak puncheons on the lees.
Tasting Notes
This Grenache opens with a lifted, aromatic profile that is unmistakably Rocks District, wild strawberry, pomegranate, and dried cherry layered over cracked white pepper, thyme, and cured meat. The whole-cluster fermentation brings beautiful complexity and savoriness to this wine.
On the palate, the wine is silky yet energetic, offering a core of red berry purity wrapped in savory mineral tones. A vibrant, mouthwatering acidity carries the wine into a long, red-fruit and stone driven finish.
