The fruit is handpicked, and hand sorted into 1.5 and 2 ton open top stainless steel fermenters. The cap was punched down three times per day by hand. The young wine was transferred to French oak barrels to complete fermentation.

Tasting Notes
Une Vallée Red Wine, our flagship Cabernet-based blend, which we have been crafting since 2000 has proven over the years to age very well. This exceptional wine consists of a blend of our favorite barrels from the vintage. The wine shows a deep ruby color in the glass. The nose reveals complex aromas of cherry, blackberry, wet earth, leather, cedar, mocha, herb, and barrel spice. The palate showcases a plush mouthfeel with rich red and blue fruits, and a subtle graphite element. You will be well rewarded if you age this wine at least two to three years (or more!) to develop in the cellar, and then you will wish you had more. Enjoy!
