Handpicked and hand sorted into 1.5 and 2 ton open top stainless steel fermenters. The cap was punched down three times per day by hand. The wine was transferred to French oak barrels to complete fermentation.
Aging
19 months in French oak barrels. 50% New.
Tasting Notes
The Hunt & Gather represents the pinnacle of Saviah’s winegrowing prowess. Dark ruby colored in the glass. Complex aromas and flavors, of dark fruit, olive tapenade, smoked meat, mingle with notes of cherry compote, ripe berries, umami, and tobacco. The wine’s well-integrated tannins provide structure and support, while vibrant acidity keeps the palate refreshed. The flavors are rich and mouth-coating, offering depth, complexity, and elegance with every sip. There’s a harmonious balance between fruit, oak, and savory elements, leading to a long and satisfying finish adorned with nuances of dark chocolate and espresso.
