Handpicked and hand sorted into 1.5 and 2 ton open top stainless steel fermenters. One-third whole cluster with two-thirds destemmed fruit. The cap was punched down three times per day by hand. After pressing the must, the young wine was transferred to 500-liter puncheons to complete fermentation.

Aging

17 months in neutral French oak puncheons.

Tasting Notes

What a treat! A small lot wine that we’ve bottled aged to perfection. The Waterstone Estate Syrah showcases the unique characteristics of this block of grapes grown on a fan trellis (the plants literally are shaped like a handheld fan) in the heart of The Rocks District. The wine is deeply colored in the glass, with heady aromas of marionberries, plum, cured meats, cracked peppercorn, and smoked sea salt. On the palate the wine is rich and concentrated. Flavors are savory with dark fruit, cocoa nibs, olive brine with hints of sweet herbs, and wet stone. The finely textured tannins are structured and firm, suggesting both immediate pleasure and aging potential. A classic Rocks District Syrah!
