Partially whole cluster fermentation, partially de-stemmed and crushed into open top fermenters with cap punched down by hand two-three times per day. Secondary fermentation finished in barrel. Aged 18 months in French oak barrels, 16% new French Oak
Another gorgeous expression of Rocks fruit, with complex aromas of wet stone, French roast coffee, and nutmeg up front. Notes of sassafras, licorice root, and hazelnut emerge with time in the glass. Minerality dominates the palate, supporting the juicy acidity and flavors of chocolate, blackberry, and anise. A long, raspberry-infused finish invites another sip. Enjoy!
