Small open top stainless steel fermenters. One third whole cluster with two thirds destemmed fruit. The cap was punched down three times per day by hand.  Free run juice was transferred to 500 liter puncheons to complete fermentation.

17 months in French oak puncheons, 20% new

Tasting Notes

A pure expression of Syrah from The Rocks District. This single vineyard, terroir-driven wine displays profound aromatics of dark fruits, olive tapenade, moist earth and iron with a tinge of anise and smoky bacon. The texture is divine with complex layers of red and black fruits, umami, tobacco, grilled portobello mushrooms and an overall savory, silky sensation that is irresistible. Drink 2020-2030.
